A call to action for restaurateurs!

I had a very interesting conversation with my Dad the other day. When he hears the word "Whisky", he thinks Scotch, whereas I think Bourbon. The differences between Scotch and Bourbon are vast, yet they are still lumped in under the umbrella of Whiskey. So, what is Whisky? 

In this global lockdown, I have all the time in the world to tinker and improve my style. I have access to spirits, better access to spirits than I would normally. I have literally all the time in the world. So what's missing?
